The journey began back in 2007, when Dave and Sarah discovered their mutual love for exquisite food, fine wine, and unforgettable adventures. Their first chapter together unfolded as co-managers of an eco-resort nestled in a breathtaking coastal setting. "Imagine waking up to dolphins dancing in the bay outside our kitchen window—truly a magical experience," says Dave.

After their time at the resort, they were invited to manage a 5-star boutique hotel in a renowned wine region, surrounded by some of the world’s most celebrated vineyards. This opportunity deepened their knowledge and passion for wine, and gave them the chance to enjoy tranquil moments on their beloved boat, aptly named Perfect Moment. After four enriching years, they took a leap of faith and opened a five-bedroom luxury lodge—marking the birth of Essence. "We connected with local wineries and hosted their guests, gradually building our reputation for exceptional catering," says Sarah.

As the years passed, their ventures grew to include a winery restaurant and a French patisserie, eventually giving rise to Essence Catering as its own distinct brand. When an unexpected natural disaster devastated their then-thriving restaurant, it forced a hard reset. Drawing on their resilience and faith, they slowly began the journey of rebuilding. It was during this time that Sarah made a spontaneous suggestion to start fresh in a new destination. Initially hesitant, Dave soon noticed that all the right doors were opening—leading to a Head Chef position with a professional sports team.

Meanwhile, Sarah became a vibrant part of the local school community by revamping the canteen with wholesome, delicious meals—soon becoming a highlight for the students.

Though Dave was later made redundant during the pandemic, he found a new role as Head Chef at a private golf club, while Sarah continued growing her catering clientele—eventually partnering with a Melbourne-based catering company. After four and a half years, Dave transitioned to support Sarah full-time, helping to relaunch Essence Catering in their new home town, Perth.
